You can check in the "Released Mods" section for a mod that makes it always day.

Coal can be found basically anywhere where's there's stone. Check the entrances to caves and look for dark spots on the stone. You can also usually find it in the sides of cliffs.

Creepers can only spawn in the darkness or at night, but they do not burn during the day like zombies and skeletons do. And the remain hostile and try to blow you up, unlike spiders, which turn neutral during the day.

And there are torches, but they only emit light when you place them, not when you hold them.
